  • 1 ¾ cups all-purpose flour
  • 2 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp baking powder
  • ¾ cup unsalted butter, softened
  • 2 egg yolks
  • 6 oz cream cheese

Instructions

  1. Prepare the apple cider reduction by boiling apple cider in a saucepan until it thickens slightly, then cool.
  2. Make the cheesecake filling by beating cold cream cheese with sugar until smooth; mix in vanilla and cooled apple cider reduction.
  3. In a separate bowl, cream softened butter with light brown sugar, then blend in egg yolks and vanilla.
  4. Combine dry ingredients (flour, baking powder, spices) in another bowl; gradually add to wet mixture until fully combined.
  5. Preheat oven to 350°F (175°C). Scoop dough balls, flatten them, add cheesecake filling, and seal.
  6. Place on lined baking sheets, brush with melted butter, sprinkle spiced sugar topping, and bake for about 11 minutes.
