Instructions
- Preheat the oven to 400°F and line a muffin tin with paper liners.
- In one bowl, combine ¾ cup flour, ¼ cup brown sugar, 2 tablespoons granulated sugar, and cinnamon. Add melted butter and mix until clumps form for the crumble topping.
- In another bowl, whisk together remaining dry ingredients: 2 cups flour, baking powder, salt, and additional cinnamon.
- In a large mixing bowl, cream together ½ cup brown sugar, ¼ cup granulated sugar, and ½ cup butter until fluffy. Add eggs, sour cream, and vanilla extract; mix well.
- Gradually combine wet and dry ingredients, adding milk halfway through. Fold in diced apples gently.
- Fill muffin cups three-quarters full with batter and sprinkle crumble topping generously on each.
- Bake for about 20 minutes or until a toothpick comes out clean; cool briefly in the pan before transferring to a wire rack.
