  • 4 large eggs
  • 1/2 cup non-fat plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 leeks, thinly sliced
  • 1 lb asparagus, cut into 1/2-inch pieces
  • 1 cup lite Swiss cheese (or Gouda/Fontina)

Instructions

  1. Preheat the oven's broiler and set the rack in the center.
  2. In a mixing bowl, whisk together egg whites, whole eggs, Greek yogurt, salt, and pepper until smooth.
  3. Heat olive oil in a skillet over medium heat. Sauté leeks for 4 minutes until fragrant, then add asparagus for another 4 minutes until slightly tender.
  4. Pour the egg mixture over vegetables and sprinkle cheese on top. Cook on medium-low for about 9 minutes until mostly set.
  5. Transfer to the broiler for about 4 minutes until golden brown on top.
