  • 4 large russet potatoes (or 5 large red potatoes)
  • 1 red bell pepper
  • 1 cup julienned carrot sticks

  • Fresh parsley
  • 1 teaspoon sugar
  • ½ cup white onion (minced)
  • Salt and pepper to taste
  • 1 teaspoon Dijon mustard or yellow mustard
  • Dash of celery seed

Instructions

  1. Boil the potatoes until fork-tender (about 15 minutes). Drain and let cool slightly before peeling.
  2. In a bowl, mix mayonnaise, red apple vinegar, sugar, minced onion, and salt until combined.
  3. Chop the cooled potatoes into bite-sized pieces. Add to a large mixing bowl along with julienned bell pepper, carrots, diced celery, mustard, chives, parsley, and celery seed.
  4. Pour the dressing over the mixture and gently fold until well coated.
  5. Cover and refrigerate for at least one hour before serving to enhance flavors.
