- 2 large baking potatoes
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 0.5 tsp red chili flakes
- 1 block (200g) feta cheese
- 1 head of garlic (top cut off)
- 1 lemon, halved
- 1 tbsp honey
- 1/4 cup fresh basil
Instructions
- Preheat the oven to 200C (390F).
- Wash, cube, and par-boil the potatoes in salted water for 6-8 minutes; drain and let steam dry.
- Place potatoes in a baking dish; season with thyme, oregano, salt, pepper, and drizzle with olive oil. Toss to coat evenly.
- Wrap the garlic head in foil with a drizzle of olive oil and place it in the dish with the potatoes.
- Roast for 30-40 minutes until golden brown.
- Add the feta in the center of the dish and squeeze half a lemon over it; return to oven for another 15 minutes.
- Once cooled slightly, squeeze out roasted garlic into the potatoes and mix with juice from the remaining lemon half and fresh basil.
- Drizzle honey over the top, sprinkle red chili flakes, and serve warm.
