  • 1 lb large or jumbo shrimp, peeled and deveined
  • 1 cup Panko breadcrumbs
  • 1/4 cup melted butter
  • 2 cloves garlic, minced
  • 1 small shallot, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1/4 cup white wine or seafood stock (optional)
  • 1/2 tsp paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and devein shrimp; butterfly each shrimp by slicing down the back.
  3. In a skillet over medium heat, melt butter and sauté garlic and shallots until soft. Stir in breadcrumbs, parsley, lemon juice, salt, pepper, and optional wine or stock.
  4. In a greased baking dish, spread a layer of stuffing at the bottom. Place shrimp cut-side down on top and spoon remaining stuffing over each shrimp.
  5. Drizzle additional melted butter on top and sprinkle with paprika.
  6. Bake for 18-20 minutes until shrimp are opaque and topping is golden brown. Optional: Broil for an extra crisp finish.
