  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 tablespoon finely grated lemon zest
  • 1 1/2 cups sour cream
  • 1/4 cup neutral oil (such as canola or grapeseed)
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract (optional)
  • 1 1/2 teaspoons kosher salt
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 2 1/2 cups all-purpose flour
  • 1/2 cup cream cheese, softened
  • 2 tablespoons granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy cream, cold
  • 4 cups assorted berries (any combination of raspberries, blueberries, blackberries and sliced strawberries)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together sugar, eggs, and lemon zest until foamy. Incorporate melted butter, sour cream, oil, vanilla extract, and salt; mix until smooth.
  3. Add baking powder and soda, then gently fold in the flour until no white streaks remain.
  4. Pour batter into the prepared pan and bake for 35-40 minutes or until a skewer comes out clean.
  5. Allow the cake to cool completely before removing from the pan.
  6. For the topping: whip together cream cheese, sugar, vanilla extract, and heavy cream until soft peaks form.
  7. Transfer cooled cake to a platter and top with whipped cream and fresh berries.
