Ingredients
- 5 oz black raspberries or blackberries
- Juice of half a lemon
- 2 tablespoons granulated sugar
- 2 cups digestive cookie or graham cracker crumbs
- ½ cup butter (melted)
- 1 tablespoon powdered sugar
- 2 brick packages cream cheese (or 16 oz, at room temperature)
- ½ cup sour cream (at room temperature)
- 1 teaspoon pure vanilla extract
- ½ cup granulated sugar
- ½ teaspoon fine sea salt
- 2 large eggs (at room temperature)
Instructions
- Prepare the black raspberry compote by cooking berries, sugar, and lemon juice in a small pot until thickened.
- For the crust, preheat the oven to 350°F. Combine melted butter with cookie crumbs and powdered sugar; press into an 8×8 inch pan and bake for 10 minutes. Lower heat to 325°F and cool.
- Beat cream cheese, sour cream, vanilla extract, sugar, and salt until smooth. Add eggs one at a time until just combined.
- Layer half of the cheesecake mixture over the cooled crust, swirl in some compote, add remaining filling, then top with more compote before swirling again.
- Bake in a water bath for 45-60 minutes until edges set; cool completely before refrigerating overnight.
