  • 5 oz black raspberries or blackberries
  • Juice of half a lemon
  • 2 tablespoons granulated sugar
  • 2 cups digestive cookie or graham cracker crumbs
  • ½ cup butter (melted)
  • 1 tablespoon powdered sugar
  • 2 brick packages cream cheese (or 16 oz, at room temperature)
  • ½ cup sour cream (at room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup granulated sugar
  • ½ teaspoon fine sea salt
  • 2 large eggs (at room temperature)

Instructions

  1. Prepare the black raspberry compote by cooking berries, sugar, and lemon juice in a small pot until thickened.
  2. For the crust, preheat the oven to 350°F. Combine melted butter with cookie crumbs and powdered sugar; press into an 8×8 inch pan and bake for 10 minutes. Lower heat to 325°F and cool.
  3. Beat cream cheese, sour cream, vanilla extract, sugar, and salt until smooth. Add eggs one at a time until just combined.
  4. Layer half of the cheesecake mixture over the cooled crust, swirl in some compote, add remaining filling, then top with more compote before swirling again.
  5. Bake in a water bath for 45-60 minutes until edges set; cool completely before refrigerating overnight.
