  • 56 medium sweet potatoes (peeled & cut into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar (light or dark)
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into thin medallions; arrange in a baking dish.
  3. In a medium saucepan over medium heat, combine butter, brown sugar, water, cinnamon, cloves, nutmeg, and salt. Stir until melted and smooth.
  4. Brush three-quarters of the sauce over the sweet potato medallions. Cover with foil and bake for 45-50 minutes.
  5. Remove foil, drizzle remaining sauce on top, and sprinkle with pecans and mini vegan marshmallows.
  6. Broil for 1-2 minutes until marshmallows are lightly toasted; watch closely to prevent burning.
  7. Let cool for 10-15 minutes before serving.
