- 5–6 medium sweet potatoes (peeled & cut into thin medallions)
- ¼ cup unsalted butter
- ¼ cup brown sugar (light or dark)
- ½ cup water
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- ¼ teaspoon salt
- ¼ cup chopped pecans (or walnuts)
- ½ cup mini vegan marshmallows
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and slice the sweet potatoes into thin medallions; arrange in a baking dish.
- In a medium saucepan over medium heat, combine butter, brown sugar, water, cinnamon, cloves, nutmeg, and salt. Stir until melted and smooth.
- Brush three-quarters of the sauce over the sweet potato medallions. Cover with foil and bake for 45-50 minutes.
