Ingredients

Scale
  • 3 1/2 cup blackberries (fresh or frozen)
  • ½ cup granulated sugar
  • 2 1/2 tablespoons cornstarch
  • ⅛ teaspoon salt
  • ¼ cup warm water
  • 2 ¼ teaspoon active dry yeast (one 1/4-ounce packet)
  • 1 teaspoon granulated sugar
  • ¼ cup instant vanilla pudding mix
  • 1 cup milk (warmed in microwave for 3040 seconds)
  • ⅓ cup unsalted butter (melted)
  • 1 tablespoon Greek yogurt
  • 1 egg
  • ½ teaspoon salt
  • 33 ¼ cup all-purpose flour
  • 5 tablespoons salted butter (softened)
  • 2/3 cup brown sugar
  • 2 ½ teaspoon cinnamon
  • 5 ounces cream cheese
  • 5 tablespoons unsalted butter (softened)
  • 1 tablespoon corn syrup
  • 2 teaspoons vanilla
  • 1/8 teaspoon salt
  • 2 cups powdered sugar
  • 1/4 cup blackberry filling (reserved from filling)

Instructions

  1. For the filling, combine blackberries, sugar, cornstarch, salt, and warm water in a saucepan over medium heat. Cook until thickened; let cool.
  2. Activate the yeast by mixing it with warm water and sugar; let it sit until bubbly.
  3. In a large bowl, mix warm milk, melted butter, yogurt, egg, salt, and pudding mix. Add the activated yeast mixture.
  4. Gradually stir in flour until a soft dough forms. Knead on a floured surface for 5-7 minutes until smooth.
  5. Let the dough rise in an oiled bowl covered with cloth for about 60 minutes.
  6. Preheat oven to 350°F (175°C). Roll out dough into a rectangle and spread softened butter on top; sprinkle brown sugar mixed with cinnamon and cooled blackberry filling evenly.
  7. Roll into a log shape and cut into 12 equal pieces; place in a greased baking dish to rise again for 30 minutes before baking for 25 minutes until golden brown.
  8. Prepare frosting by beating cream cheese, softened butter, corn syrup, vanilla, salt, powdered sugar, and reserved blackberry filling until smooth.
  9. Frost rolls while still warm and enjoy!
