  • 1/2 teaspoon lime zest (optional)
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup powdered sugar

Instructions

  1. In a medium saucepan, cook blackberries and water over medium heat for about 10-15 minutes until soft. Add sugar if necessary and let dissolve.
  2. Blend the mixture until smooth in a high-powered blender, then refrigerate until cool (about 30 minutes).
  3. In a bowl, mix cream cheese, milk, lime juice, zest (if using), vanilla extract, and powdered sugar until smooth; refrigerate.
  4. Layer blackberry puree and cheesecake mixture in popsicle molds. Insert sticks and freeze until solid (4-6 hours).
  5. Run warm water over molds to release popsicles before serving.
