  • 1.5 pounds boneless skinless chicken breasts or thighs
  • 1 can pineapple chunks (20 oz)
  • 0.5 cup brown sugar
  • 0.33 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Season chicken pieces with salt, pepper, and garlic powder.
  3. In a skillet, heat olive oil over medium-high heat and brown the seasoned chicken for about 4 minutes.
  4. In a bowl, whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch until smooth.
  5. Place browned chicken in the baking dish and pour pineapple chunks and glaze over it.
  6. Bake covered for 25–30 minutes until cooked through; then uncover and bake an additional 5–10 minutes for caramelization.
  7. Let rest for 5 minutes before serving.
