  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced
  • Sesame seeds

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, combine soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and black pepper. Mix well.
  3. Place beef short ribs in a shallow dish and pour the marinade over them. Allow marinating for at least 30 minutes or overnight.
  4. Heat oil in a cast iron Dutch oven over medium-high heat. Sear short ribs on each side until browned.
  5. Pour remaining marinade over the seared ribs; cover and roast in the oven for about 3 hours until tender.
  6. Create a glaze by mixing cornstarch with water; add to pot to thicken sauce for about 5 minutes before serving.
