Ingredients
- 150 ml milk (whole or semi-skimmed)
- 4 chai tea bags
- 135 g unsalted butter (softened)
- 135 g light brown sugar
- 2 large eggs
- 200 g self-raising flour
- Spices: cinnamon, ground ginger, ground cloves, ground cardamom, ground nutmeg
- For buttercream: 200 g unsalted butter, 400 g icing sugar, additional spices
Instructions
- Warm the milk until hot but not boiling. Add chai tea bags and steep for 10-15 minutes.
- Preheat your oven to 160C (fan) / 180C / 350F / Gas Mark 4 and line a cupcake tin with cases.
- In a mixing bowl, cream together softened butter and light brown sugar until smooth.
- Beat in the eggs and vanilla extract until well combined.
- In another bowl, whisk together flour and spices; gradually add to the wet mixture.
- Incorporate the chai-infused milk until fully combined.
- Divide batter into cases and bake for 20-25 minutes or until golden brown.
