Description

Ingredients

  • 1 ¾ cups whole milk (divided)
  • 6 chai tea bags
  • 2 cloves
  • 1 stick cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon allspice
  • 3 teaspoons powdered vegan gelatine (unflavoured)
  • ⅓ cup white granulated sugar
  • 1 ½ cups thickened cream
  • 1 teaspoon vanilla extract
  • ¼ cup sugar (for pistachio toffee)
  • 1 tablespoon water (for pistachio toffee)
  • chopped pistachios (for pistachio toffee)

Instructions

  1. Infuse the milk by combining 1 cup with chai tea bags and spices in a saucepan until simmering. Steep for about 10 minutes.
  2. In a mixing bowl, combine the remaining milk with powdered vegan gelatine and set aside.
  3. Remove spices from infused milk, stir in sugar until dissolved, then add heavy cream and vanilla extract. Whisk in the gelatine mixture until smooth.
  4. Pour into serving glasses/ramekins and refrigerate for at least 4 hours.
  5. For pistachio toffee, melt sugar and water in a saucepan until golden brown; stir in chopped pistachios.
  6. Serve chilled, topped with pistachio toffee.
