  • 3 boneless skinless chicken breasts
  • 1/2 cup pure maple syrup
  • 1/4 cup olive oil
  • 1/4 cup orange juice
  • 1 tablespoon chipotle chili powder
  • 2 tablespoon butter
  • 2 teaspoons cornstarch
  • 1/4 cup water
  • 1/4 cup apricot preserves
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon oregano
  • 1/4 teaspoon pepper
  • 1 teaspoon orange zest
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a medium bowl, whisk together marinade/glaze ingredients (maple syrup, olive oil, orange juice, etc.). Reserve some for glazing.
  2. Combine spices in a small bowl; add most to the marinade and set aside half a teaspoon for the reserved glaze.
  3. Marinate the chicken in the marinade mix for 2-6 hours.
  4. Preheat grill to medium heat or heat olive oil in a skillet.
  5. Grill chicken for 3–4 minutes per side until cooked through (165°F internal temp) or pan-fry until browned on both sides.
  6. While cooking, heat reserved glaze until simmering and thickened; brush over chicken before serving.
