Ingredients
- ½ cup unsalted butter (room temperature)
- 1 cup granulated sugar (200 grams)

- 1¼ cups flour (163 grams, fluffed and levelled)
- ⅓ cup unsweetened cocoa powder (30 grams)
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1½ cups powdered icing sugar
- ½ cup unsalted butter (room temperature)
- 1 tablespoon milk
- ½–1 teaspoon mint extract (depending on your tastes)
- green food coloring (optional)
- ¾ cup semisweet chocolate chips or chopped chocolate (130 grams)
- 1 tablespoon oil
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together room temperature butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
- In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually combine dry ingredients into the wet mixture until well blended.
- Scoop tablespoons of dough onto the prepared baking sheet with space between each cookie. Bake for about 10 minutes or until set around the edges but still soft in the center. Let cool on the baking sheet for a few minutes before transferring to a cooling rack.
- For the mint frosting, mix powdered icing sugar, softened butter, milk, and mint extract until smooth. Spread generously over cooled cookies.
