Ingredients

Scale
  • 1 lb boneless skinless chicken breast (cut into cubes)
  • 4 cloves garlic (minced)
  • 2 tablespoons lime juice (freshly squeezed)
  • 1/2 teaspoon chili flakes
  • 3 tablespoons cilantro leaves (chopped)
  • 1/4 teaspoon salt
  • 1 pinch paprika
  • 4 tablespoons olive oil

Instructions

  1. Soak bamboo skewers in cold water for at least 30 minutes to prevent burning.
  2. In a mixing bowl, combine chicken cubes with garlic, lime juice, chili flakes, cilantro, salt, and paprika until well coated.
  3. Stir in 2 tablespoons of olive oil and let the mixture marinate for at least 30 minutes (preferably up to 2 hours).
  4. Thread three pieces of marinated chicken onto each skewer without overcrowding.
  5. Preheat your grill or grill pan over medium-high heat; grill skewers for about 10 minutes, periodically basting with remaining olive oil until cooked through with char marks.
