  • 1 lb boneless, skinless chicken breast or thighs
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups cooked jasmine rice
  • Fresh lime juice
  • Olive oil or coconut oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or brown sugar
  • ½ teaspoon ground turmeric
  • ½ teaspoon chili flakes (optional for heat)
  • Salt and pepper, to taste
  • Fresh cilantro or basil, chopped
  • Lime wedges
  • Optional toppings: sliced cucumber, shredded carrots, toasted coconut flakes, chopped peanuts
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Marinate chicken with garlic, ginger, soy sauce, lime juice, turmeric, chili flakes, salt, and pepper for 10-15 minutes.
  2. Heat oil in a skillet over medium heat; cook marinated chicken for 4–6 minutes until browned.
  3. Add coconut milk and honey to the skillet; simmer for 6–8 minutes until chicken is cooked through and sauce thickens.
  4. Serve over jasmine rice; garnish with cilantro or basil, lime wedges, and optional toppings like cucumber or peanuts.
