  • 2 vegan gelatin sheets (4g)
  • 200ml heavy cream
  • 80g mascarpone
  • 80g powdered sugar
  • 120ml coconut milk
  • 120g powdered sugar
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • A pinch of sea salt
  • 1/2 sachet baking powder
  • 3 egg yolks
  • Grated coconut
  • Gooey Cocoa Spread

Instructions

  1. Prepare the Coconut Mousse: Whip heavy cream and mascarpone until soft peaks form, then mix in powdered sugar. Chill while preparing other components.
  2. Soak vegan gelatin sheets in cold water until softened. Gently heat coconut milk and dissolve the soaked gelatin.
  3. Fold the coconut mixture into the whipped cream until well combined.
  4. Pour mousse into hemisphere molds, adding a teaspoon of cocoa spread in the center before freezing for at least 6 hours.
  5. Make Cocoa Breton Shortbread by mixing butter, sugar, flour, cocoa powder, salt, baking powder, and egg yolks until dough forms; chill and cut into circles before baking.
  6. Assemble by placing domes on cooled shortbread and thawing before serving.
