- A pinch of sea salt
- 1/2 sachet baking powder
- 3 egg yolks
- Grated coconut

Instructions
- Prepare the Coconut Mousse: Whip heavy cream and mascarpone until soft peaks form, then mix in powdered sugar. Chill while preparing other components.
- Soak vegan gelatin sheets in cold water until softened. Gently heat coconut milk and dissolve the soaked gelatin.
- Fold the coconut mixture into the whipped cream until well combined.
- Pour mousse into hemisphere molds, adding a teaspoon of cocoa spread in the center before freezing for at least 6 hours.
- Make Cocoa Breton Shortbread by mixing butter, sugar, flour, cocoa powder, salt, baking powder, and egg yolks until dough forms; chill and cut into circles before baking.
