- 3 tablespoons olive oil (divided)
- 1 tablespoon lime juice

- 1½ cups corn (fresh or thawed frozen)
- 1½ cups cherry tomatoes (halved)
- ½ cup cucumber (finely chopped)
- 2 tablespoons fresh basil (minced)
- ⅓ cup crumbled feta cheese
- 2 tablespoons Italian dressing (optional)
Instructions
- Whisk together 2 tablespoons of olive oil, lime juice, and salt in a small bowl. Set aside.
- Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add corn and cook for about 5–7 minutes until tender.
- In a large mixing bowl, combine cooked corn with halved cherry tomatoes, chopped cucumber, and minced basil.
- Chill the mixture in the refrigerator until ready to serve.
