Ingredients

  • 4 ears of fresh corn (shucked)
  • 1 cup halved grape tomatoes
  • 1 cup diced English cucumber
  • 1/3 cup diced red onion
  • 2/3 cup crumbled feta cheese
  • Fresh parsley and basil for garnish
  • 1/4 cup olive oil
  • 1 1/2 Tbsp red apple vinegar
  • 1 Tbsp lemon juice
  • 1 1/2 tsp honey
  • 1/2 tsp minced garlic
  • 1/2 tsp each salt and freshly ground black pepper

Instructions

  1. Whisk together olive oil, apple vinegar, lemon juice, honey, garlic, salt, and pepper in a mixing bowl.
  2. Boil water in a large pot; prepare an ice water bath nearby.
  3. Cook corn in boiling water for 2-3 minutes; transfer immediately to ice water to cool.
  4. Cut kernels off the corn cobs and combine them in a large bowl with tomatoes, cucumber, onion, feta cheese, parsley, and basil.
  5. Pour the dressing over the salad and toss gently to combine.
