- 4 ears of fresh corn (shucked)
- 1 cup halved grape tomatoes
- 1 cup diced English cucumber
- 1/3 cup diced red onion
- 2/3 cup crumbled feta cheese
- Fresh parsley and basil for garnish
- 1/4 cup olive oil
- 1 1/2 Tbsp red apple vinegar
- 1 Tbsp lemon juice
- 1 1/2 tsp honey
- 1/2 tsp minced garlic
- 1/2 tsp each salt and freshly ground black pepper
Instructions
- Whisk together olive oil, apple vinegar, lemon juice, honey, garlic, salt, and pepper in a mixing bowl.
- Boil water in a large pot; prepare an ice water bath nearby.
- Cook corn in boiling water for 2-3 minutes; transfer immediately to ice water to cool.
- Cut kernels off the corn cobs and combine them in a large bowl with tomatoes, cucumber, onion, feta cheese, parsley, and basil.
- Pour the dressing over the salad and toss gently to combine.
