  • 2 (3-ounce) packages crumbled ramen noodles (seasoning packets discarded)
  • 1 cup shelled and cooked edamame
  • 1 avocado, diced
  • 1 mango, julienned or diced
  • 1/2 cup thinly-sliced almonds
  • 1/2 cup thinly-sliced green onions (scallions)
  • 1/2 cup avocado oil
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 2 teaspoons soy sauce
  • 1/4 teaspoon toasted sesame oil
  • Pinch of salt and black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Gather all ingredients and chop the mango and avocado.
  2. Boil water in a pot and cook the crumbled ramen noodles until tender, then drain and let cool.
  3. In a bowl, whisk together the dressing ingredients: avocado oil, honey, rice vinegar, soy sauce, toasted sesame oil, salt, and pepper.
  4. In a large mixing bowl, combine coleslaw mix, cooled ramen noodles, edamame, mango, avocado, almonds, and green onions.
  5. Pour the dressing over the salad mixture and toss gently to coat evenly. Chill for about 30 minutes before serving for enhanced flavor.
