  • 2 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 cup bell peppers (mixed colors), diced
  • 2 cups broccoli florets (fresh or frozen)
  • ¾ cup teriyaki sauce
  • 2 tbsp honey
  • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper, placing them in the baking dish.
  3. Scatter diced bell peppers and broccoli florets over the chicken.
  4. In a bowl, mix teriyaki sauce, honey, minced garlic, grated ginger, and cornstarch mixture until smooth; pour over chicken and veggies.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden.
