Ingredients

  • 2 large flour tortillas (1012 inches)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 2 cups fresh spinach
  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup sliced red onion
  • 1 tsp dried oregano
  • 2 tsp olive oil

Instructions

  1. Prepare the filling by sautéing diced bell peppers and sliced red onion in olive oil over medium heat for about 5 minutes until softened.
  2. Add fresh spinach to the skillet and cook until wilted, about 2 minutes.
  3. Season with dried oregano, salt, and pepper, stirring to combine.
  4. Assemble each quesadilla by placing mozzarella cheese on one half of a tortilla, followed by the veggie mixture and crumbled feta. Fold the tortilla over.
  5. In the same skillet, add more olive oil if necessary and cook each folded quesadilla for about 3 minutes on each side until golden brown and crispy.
  6. Slice into triangles and serve warm with your choice of dipping sauce.
