  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice
  • 1 cup cheddar cheese (diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 cup dill pickle juice
  • 1/4 teaspoon Sriracha (or other hot sauce)
  • Salt (to taste)
  • 1/2 teaspoon black pepper
  • 3 tablespoons white onion (finely chopped)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook the elbow pasta according to package instructions until al dente; rinse under cold water and drain.
  2. In a mixing bowl, combine cooked pasta with 1/2 of the dill pickle juice and let it marinate for 5 minutes.
  3. In another bowl, whisk together mayonnaise, sour cream, remaining pickle juice, Sriracha, salt, and pepper until smooth.
  4. In a large bowl, mix marinated pasta with diced cheese, sliced pickles, chopped dill, and onion.
  5. Pour dressing over the mixture and toss until well-coated.
  6. Cover and refrigerate for 4-6 hours before serving.
