  • 1/4 cup all-purpose flour
  • 1/4 tsp smoked paprika
  • Pinch of salt and pepper
  • 1 egg
  • 1 cup panko breadcrumbs
  • 1 cup oil (olive oil recommended)
  • 1 cup cooked corn
  • 1/4 cup feta cheese
  • 1/2 jalapeño (sliced)
  • 3 tbsp red onion (diced)
  • 2 tbsp cilantro
  • Fresh parsley for garnish

Instructions

  1. Prepare your ingredients by mixing flour, paprika, salt, and pepper on a plate.
  2. Whisk the egg in a bowl and set aside. Place panko breadcrumbs on another plate.
  3. Slice the tomatoes thickly, then coat each slice in flour, dip in egg wash, and finally coat in panko.
  4. For the corn salsa, mix together cooked corn, feta cheese, jalapeño slices, red onion, cilantro, and season with salt and pepper.
  5. Heat oil in a skillet over medium-high heat. Fry tomato slices for about 1 minute per side until golden brown.
  6. Assemble by placing fried tomatoes on plates and topping them with corn salsa.
