- 3/4 cup unsalted butter, softened to room temperature

- 1 large egg yolk, room temperature

- 1/3 cup molasses, not blackstrap
- 1/3 cup turbinado or granulated sugar
- 6 tablespoons unsalted butter, softened to room temperature
- 2–3 cups icing sugar, sifted
- 3–4 tablespoons eggnog
Instructions
- Prepare dry ingredients: In a large bowl, whisk together flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt. Set aside.
- Cream butter and sugar: In another bowl, beat softened butter and brown sugar until smooth. Add egg, egg yolk, vanilla extract, and molasses; mix until combined.
- Combine mixtures: Gradually add dry ingredients to the wet mixture until fully incorporated. Chill dough for 30 minutes to 24 hours.
- Bake: Preheat oven to 350°F (175°C). Scoop dough into balls, roll in sugar, and bake for 8–10 minutes until just set. Cool on wire racks.
