  • 1/3 cup turbinado or granulated sugar
  • 6 tablespoons unsalted butter, softened to room temperature
  • 23 cups icing sugar, sifted
  • 34 tablespoons eggnog

Instructions

  1. Prepare dry ingredients: In a large bowl, whisk together flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt. Set aside.
  2. Cream butter and sugar: In another bowl, beat softened butter and brown sugar until smooth. Add egg, egg yolk, vanilla extract, and molasses; mix until combined.
  3. Combine mixtures: Gradually add dry ingredients to the wet mixture until fully incorporated. Chill dough for 30 minutes to 24 hours.
  4. Bake: Preheat oven to 350°F (175°C). Scoop dough into balls, roll in sugar, and bake for 8–10 minutes until just set. Cool on wire racks.
  5. Make frosting: Beat softened butter with icing sugar and eggnog until desired consistency is achieved.
  6. Assemble cookies: Frost one cookie’s bottom with frosting and sandwich another on top.
