- 1 1/2 cup Powdered sugar (sifted)
- 1/4 tsp Ground cinnamon
- 2 tbsp Espresso or strong coffee (adjust as needed)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, ground clove, and espresso powder.
- In another bowl, cream softened butter with brown and white sugars until light and fluffy.
- Mix in egg, vanilla extract, and molasses until combined.
- Gradually add dry ingredients to wet mixture; stir until just combined.
- Shape dough into 1-inch balls and roll in granulated sugar before placing on parchment-lined sheets.
