  • 1 1/2 sticks Unsalted butter (softened)
  • 3/4 cup Brown Sugar (dark or light)
  • 1/4 cup White granulated sugar
  • 1 Large egg (room temperature)
  • 2 tsp Vanilla extract
  • 1/4 cup Molasses
  • 1 1/2 cup Powdered sugar (sifted)
  • 1/4 tsp Ground cinnamon
  • 2 tbsp Espresso or strong coffee (adjust as needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, salt, ground ginger, cinnamon, ground clove, and espresso powder.
  3. In another bowl, cream softened butter with brown and white sugars until light and fluffy.
  4. Mix in egg, vanilla extract, and molasses until combined.
  5. Gradually add dry ingredients to wet mixture; stir until just combined.
  6. Shape dough into 1-inch balls and roll in granulated sugar before placing on parchment-lined sheets.
  7. Bake for about 13 minutes until edges are golden; let cool.
  8. For the glaze, whisk powdered sugar with ground cinnamon and espresso; drizzle over cooled cookies.
