  • 4 large Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup fresh parsley (finely chopped)
  • 1 medium red onion (finely chopped)
  • 1/4 cup crumbled feta cheese

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the potatoes thoroughly and cut them into 1/3-inch wide sticks.
  3. Soak the potato sticks in cold water for 10 to 15 minutes, then drain and dry.
  4. Toss the dried potato sticks in a large bowl with olive oil, salt, oregano, dill, black pepper, and garlic powder until evenly coated.
