Instructions

  1. Season the chicken breasts with olive oil, salt, and pepper. Preheat the grill to medium-high heat.
  2. Grill the chicken for about 6-7 minutes on each side until it reaches an internal temperature of 165°F (75°C). Let it rest before slicing.
  3. While the chicken is grilling, prepare the lemon vinaigrette by whisking together lemon juice, Dijon mustard, honey, salt, and pepper in a bowl. Gradually add olive oil while whisking until emulsified.
  4. In a large bowl, combine mixed greens, sliced avocado, cucumber, red onion, cherry tomatoes, and feta cheese if using.
