  • 1.5 lb salmon fillet (skin on)
  • Zest and juice from 1 large orange
  • 1/2 T olive oil
  • 1 T brown sugar
  • 1 tsp chipotle chili powder
  • 1/2 tsp cumin
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Soak a cedar plank in beer and water for at least 4 hours.
  2. Prepare the marinade by whisking together orange zest, juice, olive oil, brown sugar, chipotle powder, and cumin.
  3. Place the soaked cedar plank on the grill and add the salmon skin-side down.
