  • 1 large piece of flank steak (up to 3 pounds)
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp soy sauce
  • 1/2 tsp ground chipotle chile powder (or hot sauce)
  • Optional: 2 tsp lime zest
  • Garnish: Fresh parsley, finely chopped

Instructions

  1. In a bowl, combine lime juice, olive oil, cumin, oregano, onion powder, garlic powder, soy sauce, chipotle powder, and lime zest.
  2. Place the flank steak in a Ziploc bag and pour the marinade over it. Seal tightly and refrigerate for at least 8 hours or overnight.
  3. Remove the steak from the fridge about 30 minutes before grilling to bring it to room temperature.
  4. Preheat your grill to medium-high heat.
  5. Grill the flank steak for approximately 4-5 minutes per side for medium-rare or around 6 minutes per side for medium doneness.
  6. Use an instant-read thermometer to ensure the internal temperature is between 140-145°F for medium-rare or 155-160°F for medium.
  7. Let the steak rest for about 5 minutes before slicing against the grain into thin strips.
