  • ½ cup extra-virgin olive oil
  • ⅔ cup cilantro leaves (chopped)
  • Zest from 1 large orange
  • Juice from 2 large oranges (about ½ cup)
  • Juice from 4 limes (about ⅓ cup)
  • 3 tablespoons chopped fresh mint leaves
  • 6 cloves garlic (minced)
  • 2 one-pound beef tenderloins (silver skin removed)
  • Kosher salt and black pepper

Instructions

  1. In a mixing bowl, whisk together olive oil, cilantro, orange zest and juice, lime juice, mint, minced garlic, oregano, cumin, salt, and black pepper until blended.
  2. Place the beef tenderloins in a resealable bag or shallow dish and pour the marinade over them. Ensure they are fully coated and refrigerate overnight.
  3. On grilling day, preheat your grill to medium-high heat.
  4. Remove the tenderloins from the marinade and let them rest at room temperature for about 30 minutes before grilling.
  5. Grill the tenderloins for about 6-8 minutes per side until reaching medium-rare doneness.
  6. Let them rest for about 10 minutes before slicing and serve garnished with fresh parsley.
