  • 2 pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons sweet rice apple vinegar
  • 1/2 cup brown sugar
  • 2 cups pineapple chunks
  • 1 red onion (cut into chunks)
  • 1 bell pepper (cut into chunks)
  • Kosher salt and fresh ground pepper to taste
  • Olive oil (to prevent sticking)
  • Wooden skewers (soaked in water)

Instructions

  1. Prepare the teriyaki marinade by combining soy sauce, water, vinegar, brown sugar, minced garlic, and minced ginger in a saucepan over medium heat. Simmer for about 5 minutes.
  2. Thicken the sauce by whisking together cornstarch and water; add it to the marinade mixture and let cool.
  3. Marinate chicken in half of the sauce for at least 1 hour or overnight.
  4. Preheat the grill to medium heat.
  5. Assemble kabobs by threading marinated chicken, pineapple, onion, and bell pepper onto skewers.
  6. Grill kabobs for 3–4 minutes on each side until chicken reaches an internal temperature of 170°F, basting with reserved sauce.
