  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup barley tea (brewed)
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 cup chicken broth
  • 1 tablespoon butter
  • Fresh parsley for garnish

Instructions

  1. Season each chicken breast with salt and pepper.
  2. In a skillet over medium-high heat, heat olive oil and sear the chicken for about 6-7 minutes on each side until golden brown. Remove and keep warm.
  3. In the same skillet, sauté the onion until translucent, then add garlic and cook for an additional minute.
  4. Deglaze the skillet by adding brewed barley tea and simmer for about 5 minutes.
  5. Stir in chicken broth, then slowly add heavy cream while stirring continuously.
  6. Add Dijon mustard and thyme; simmer until thickened (3-4 minutes).
  7. Return chicken to the skillet, spoon sauce over it, and simmer for an additional few minutes.
  8. Finish by stirring in butter until melted; serve garnished with fresh parsley.
