  • 1 lb baby potatoes
  • 8 oz block feta cheese
  • 2 tbsp olive oil
  • 2 tsp fresh rosemary, chopped
  • 3 garlic cloves, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Wash and halve the baby potatoes. In a bowl, toss them with olive oil, garlic, rosemary, salt, and pepper until evenly coated.
  3. Spread the potatoes in the baking dish and place the feta cheese block in the center.
