  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 4 cups romaine lettuce, chopped
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 4 green onions, sliced
  • ½ cup toasted almonds
  • 2 tbsp toasted sesame oil
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey

Instructions

  2. While the chicken cools, wash and chop the romaine lettuce, bell pepper, cucumber, and green onions.
  3. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey to create the dressing.
  4. In a large bowl, combine the lettuce with sliced chicken, bell pepper, cucumber, green onions, and toasted almonds.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Serve immediately for optimal freshness.
