- 2 bell peppers (any color), diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes with green chilies
- 4 cups low-sodium chicken broth
- 2 tbsp taco seasoning
- Lime wedges (for serving)

Instructions
- In a large pot over medium heat, add a splash of olive oil. Sauté the diced onions and bell peppers until soft and fragrant, about 5 minutes.
