  • 1 medium yellow onion, diced
  • 2 bell peppers (any color), diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 4 cups low-sodium chicken broth
  • 2 tbsp taco seasoning
  • Lime wedges (for serving)
  • Fresh cilantro (for garnish)

Instructions

  1. In a large pot over medium heat, add a splash of olive oil. Sauté the diced onions and bell peppers until soft and fragrant, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until aromatic.
  3. Add chicken breasts, canned tomatoes (with juices), chicken broth, and taco seasoning to the pot. Stir well.
  4. Bring to a gentle simmer, cover, and cook for about 20 minutes until chicken is cooked through.
  5. Remove the chicken from the pot; shred it using two forks. Return it to the pot and stir to combine.
