- 10 oz fresh spinach
- 1 cup whole-milk ricotta cheese
- 2 sheets puff pastry, thawed
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 large egg, beaten
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Rinse and chop the spinach.
- Sauté spinach in olive oil over medium heat for 3-4 minutes, adding garlic for the last minute.
- In a bowl, mix sautéed spinach with ricotta, Parmesan, salt, pepper, and beaten egg.
- Roll out puff pastry on a floured surface and cut into four-inch squares.
- Place filling in the center of each square, fold or roll tightly, and seal edges.
- Brush tops with beaten egg and place on a parchment-lined baking tray.
- Bake for 20-25 minutes until golden brown.
