  • 10 oz fresh spinach
  • 1 cup whole-milk ricotta cheese
  • 2 sheets puff pastry, thawed
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg, beaten
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Rinse and chop the spinach.
  2. Sauté spinach in olive oil over medium heat for 3-4 minutes, adding garlic for the last minute.
  3. In a bowl, mix sautéed spinach with ricotta, Parmesan, salt, pepper, and beaten egg.
  4. Roll out puff pastry on a floured surface and cut into four-inch squares.
  5. Place filling in the center of each square, fold or roll tightly, and seal edges.
  6. Brush tops with beaten egg and place on a parchment-lined baking tray.
  7. Bake for 20-25 minutes until golden brown.
