  • 2 medium sweet potatoes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp pepper
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the sweet potatoes thoroughly and prick them several times with a fork. Place them on the baking sheet and roast for 45-50 minutes until tender.
  3. While the sweet potatoes are roasting, pat the chickpeas dry and toss them in a bowl with olive oil, cumin, smoked paprika, salt, and pepper. Spread in a single layer on another baking sheet.
  4. After 20 minutes of roasting the sweet potatoes, add the chickpeas to the oven. Roast for an additional 25-30 minutes until crispy.
  5. Allow sweet potatoes to cool slightly before slicing open lengthwise and fluffing the insides with a fork. Spoon in crispy chickpeas.
  6. Garnish with fresh parsley or cilantro and serve immediately.
