Ingredients

  • 2 cups watermelon juice (freshly squeezed)
  • 1/4 cup lemon juice
  • 1/2 cup granulated sugar
  • 2 tablespoons agar-agar powder
  • Optional: a few drops of red or pink food coloring

Instructions

  1. Blend about 4 cups of watermelon chunks until smooth, then strain to obtain 2 cups of watermelon juice. Mix in the lemon juice.
  2. In a saucepan over medium heat, whisk together the watermelon juice, sugar, and agar-agar powder until well mixed and simmering.
  3. Allow the mixture to gently boil for 2 minutes to activate the agar-agar.
  4. Remove from heat, optionally add food coloring, and carefully pour into gummy molds or an ice cube tray without overfilling.
  5. Refrigerate for at least 2 hours until set.
  6. Pop out the gummies from the molds and store them in an airtight container in the fridge.
