  • 4 tablespoons milk
  • 1 cup red peppers (diced)
  • ¼ cup sun-dried tomatoes
  • 2 tablespoons goat cheese crumbles
  • 3 tablespoons Parmesan cheese (freshly grated)
  • 34 gluten-free tortillas (or spelt tortillas)

Instructions

  1. Preheat the oven to 350°F and prepare a silicone muffin pan with cooking spray.
  2. Cut out circles from the tortillas using a cookie cutter and place them at the base of each muffin cup.
  3. In a large mixing bowl, whisk together eggs and milk, then fold in garlic, diced peppers, sun-dried tomatoes, olives, parsley, black pepper, salt, walnuts (or pine nuts), goat cheese, and Parmesan until well combined.
  4. Pour the egg mixture evenly into the muffin cups until they are about ¾ full.
  5. Bake for 15-20 minutes until set and lightly golden. Allow to cool slightly before serving.
