  • 2 eggs
  • Zest of 1 lime
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/8 tsp pure vanilla extract
  • Lime zest (to taste)

Instructions

  1. In a bowl, whisk together almond milk, Greek yogurt, and lime juice; let sit for 5 minutes to thicken.
  2. Crush graham crackers into fine crumbs.
  3. Combine flour, crushed graham crackers, sugar, baking powder, baking soda, and salt in another bowl.

  5. Mix melted coconut oil and eggs into the wet ingredients; add lime zest.
