- 1 tbsp lemon juice

Instructions
- Preheat your oven to 350°F (176°C).
- Cut slits in each baby potato without slicing through completely.
- In a mixing bowl, combine olive oil, melted butter, minced garlic, parsley, lemon juice, honey, salt, and pepper.
- Coat the potatoes generously with the oil mixture and place them in a roasting pan.
- Roast for about 1 hour, basting every 30 minutes with the reserved oil mixture until golden brown and tender.
