Description

Lemon Herb Roasted Potatoes are a flavorful and easy-to-make side dish that elevates any meal.   • 1/4 cup olive oil
  • 2 tbsp melted butter
  • 3 cloves garlic (minced)
  • 1 tbsp chopped Italian parsley
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (176°C).
  2. Cut slits in each baby potato without slicing through completely.
  3. In a mixing bowl, combine olive oil, melted butter, minced garlic, parsley, lemon juice, honey, salt, and pepper.
  4. Coat the potatoes generously with the oil mixture and place them in a roasting pan.
  5. Roast for about 1 hour, basting every 30 minutes with the reserved oil mixture until golden brown and tender.
