  • 1 cup long grain white rice (such as basmati or jasmine)
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 ½ cups low-sodium chicken broth (or vegetable broth for vegetarian)
  • Zest and juice of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Chopped fresh parsley (optional for garnish)

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Add diced onion and sauté for 2–3 minutes until translucent. Stir in minced garlic and cook for an additional 30 seconds.
  2. Add rice to the pan and stir to coat in oil and aromatics. Toast the rice for about 1 minute.
  3. Pour in chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Bring to a gentle boil.
  4. Reduce heat to low, cover tightly, and simmer for 18–20 minutes until liquid is absorbed.
  5. Remove from heat and let sit covered for another 5 minutes. Fluff with a fork before serving.
