  • 2 ripe avocados, diced
  • 1 small cucumber, diced
  • 1 small red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 small jalapeño, minced (deseeded for less heat)
  • ¼ cup fresh cilantro, chopped
  • Dressing: 2 tbsp lime juice
  • 1 tbsp honey (or agave syrup)
  • ½ tsp ground cumin
  • Salt and pepper

Instructions

  1. Peel and dice the mango and avocados; place in a large mixing bowl.
  2. Dice the cucumber, red onion, and red bell pepper; add to the bowl.
  3. Mince the jalapeño (remove seeds for less heat) and chop the cilantro; add both to the bowl.
  4. In a separate small bowl, whisk together lime juice, honey (or agave), cumin, salt, and pepper until well combined.
  5. Pour the dressing over the salad; gently toss to combine without mashing the avocado. Let sit for 10 minutes before serving.
