  • 4 cups confectioners’ sugar
  • 1 can (14 ounces) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 3 cups sweetened shredded coconut
  • 2 cups chopped pecans, toasted
  • 6 cups semisweet chocolate chips
  • 1/4 cup shortening

Instructions

  1. In a large mixing bowl, beat together softened butter, confectioners’ sugar, sweetened condensed milk, and vanilla extract until well blended.
  2. Fold in shredded coconut and toasted pecans until evenly incorporated.
  3. Divide the mixture into two halves, wrap in storage wrap, and refrigerate for one hour.
  4. Shape each half into 1-inch balls and place them on waxed paper-lined baking sheets. Chill for another 30 minutes.
  5. Melt chocolate chips with shortening in a double boiler over low heat until smooth.
  6. Dip each chilled candy ball into the melted chocolate and return to waxed paper to cool. Optionally top with additional coconut or desired toppings.
