- 1 red onion, halved and thinly sliced
- 1/2 tsp paprika
- 1/2 tsp allspice
- 1/2 tsp ground nutmeg
- 1/4 tsp ground green cardamom
- 1 garlic clove, minced (for sauce)
- 1 cup fresh dill, chopped
- 1 1/4 cup Greek yogurt
- 1 tbsp extra virgin olive oil (for sauce)
- 1/2 lemon or lime, juiced
- Pinch cayenne pepper (optional)
- Kosher salt (if needed)
- 2 tablespoons fresh parsley, finely chopped (for garnish)
Instructions
- Prepare the Dill Greek Yogurt Sauce by blending garlic, dill, yogurt, olive oil, lemon juice in a food processor until smooth. Refrigerate.
- Mix minced garlic with spices and olive oil in a small bowl. Rub this mixture onto each chicken thigh.
- In a large dish, combine sliced onions with lemon juice and remaining olive oil. Add marinated chicken on top and toss gently.
- Cover and marinate for 2–4 hours in the refrigerator.
- Preheat the grill to medium-high heat.
- Grill chicken thighs for about 5 minutes on one side; flip and cook for another 3–5 minutes until fully cooked (internal temperature should reach 165°F).
