  • 10 garlic cloves, minced
  • 5 tbsp extra virgin olive oil
  • 2 lemons, juiced
  • 1 red onion, halved and thinly sliced
  • 1/2 tsp paprika
  • 1/2 tsp allspice
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground green cardamom
  • 1 garlic clove, minced (for sauce)
  • 1 cup fresh dill, chopped
  • 1 1/4 cup Greek yogurt
  • 1 tbsp extra virgin olive oil (for sauce)
  • 1/2 lemon or lime, juiced
  • Pinch cayenne pepper (optional)
  • Kosher salt (if needed)
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

  1. Prepare the Dill Greek Yogurt Sauce by blending garlic, dill, yogurt, olive oil, lemon juice in a food processor until smooth. Refrigerate.
  2. Mix minced garlic with spices and olive oil in a small bowl. Rub this mixture onto each chicken thigh.
  3. In a large dish, combine sliced onions with lemon juice and remaining olive oil. Add marinated chicken on top and toss gently.
  4. Cover and marinate for 2–4 hours in the refrigerator.
  5. Preheat the grill to medium-high heat.
  6. Grill chicken thighs for about 5 minutes on one side; flip and cook for another 3–5 minutes until fully cooked (internal temperature should reach 165°F).
  7. Let it rest for 5 minutes before serving with the yogurt sauce.
