  • 1 (15 fluid ounce) can white (cannellini) beans (drained & rinsed)
  • 2 mini cucumbers (chopped)
  • 12 tablespoons red onion (chopped)
  • 1/2 red bell pepper (chopped)
  • 10 ounces cherry tomatoes (halved)
  • 1/3 cup Kalamata olives (pitted & chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1/2 teaspoon dried oregano
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon red apple vinegar
  • Salt & pepper to taste

Instructions

  1. Prepare all ingredients by rinsing the canned beans and chopping vegetables.
  2. In a large salad bowl, combine the drained white beans with cucumbers, red onion, bell pepper, tomatoes, and olives.
  3. Drizzle olive oil and vinegar over the mixture; sprinkle with salt, pepper, oregano, and feta cheese.
  4. Gently toss all ingredients until well combined.
  5. Taste and adjust seasoning as desired.
  6. Serve immediately or chill in the refrigerator for at least 30 minutes to enhance flavors.
