Ingredients
- 1 (15 fluid ounce) can white (cannellini) beans (drained & rinsed)
- 2 mini cucumbers (chopped)
- 1–2 tablespoons red onion (chopped)
- 1/2 red bell pepper (chopped)
- 10 ounces cherry tomatoes (halved)
- 1/3 cup Kalamata olives (pitted & chopped)
- 1 tablespoon fresh parsley (chopped)
- 1/2 teaspoon dried oregano
- 1/2 cup crumbled feta cheese
- 1 tablespoon olive oil
- 1 tablespoon red apple vinegar
- Salt & pepper to taste
Instructions
- Prepare all ingredients by rinsing the canned beans and chopping vegetables.
- In a large salad bowl, combine the drained white beans with cucumbers, red onion, bell pepper, tomatoes, and olives.
- Drizzle olive oil and vinegar over the mixture; sprinkle with salt, pepper, oregano, and feta cheese.
